Too Much Turkey?

Recipes for Turkey Leftovers

That 23-pound turkey you purchased seemed like a good idea idea, at the time, didn’t it? Of course, post-Thanksgiving, you have too much leftover turkey and don’t know what to do with it all. After the first few turkey sandwiches, the kids are complaining and you’re wishing you had packed up more leftovers for your in-laws to take home with them.

Don’t fret. We have recipes that will not only help take down the rest of that turkey but won’t have you feeling like you are eating Thanksgiving dinner over and over and over again.

November Pie
“November Pie” is designed to use up leftovers, so gather whatever you have left when your guests leave and follow these directions to make another great meal.

Ingredients:
Turkey sliced/shredded (white meat, dark meat, or both)
Gravy
Vegetables (corn, peas, carrots, whatever you have left over)
Mashed potatoes or mashed sweet potatoes
Stuffing

Directions:
1. Heat a Cuisinart CastLite Fry Pan and brown leftover turkey
2. Remove from heat and cover turkey with gravy
3. Add a layer of vegetables
4. Cover with mashed potatoes and spread evenly
5. Add a layer of stuffing
6. Bake at 350F for 30-45 minutes or until heated through and the stuffing is crispy (The CastLite Fry Pan is oven safe so no need to dirty another dish!)
7. Serve hot

Turkey and Mashed Potato Pancakes

Ingredients:
2 cups mashed potatoes
1 cup shredded or diced leftover turkey
1 egg
1 tsp. cornstarch
Vegetable oil, as needed

Garnish:
Sour cream
Chopped bacon
Chopped scallions or chives

Directions:
1.  In a mixing bowl combine mashed potatoes, turkey, egg and cornstarch
2.  Mix well to fully incorporate
3.  Add enough oil to fill the Cuisinart CastLite Fry Pan 1/8 inch
4.  Heat oil over medium heat
5.  Using a large soup spoon, add a heaping spoonful of mashed potato mixture to skillet
6.  Flatten spoonful with a spatula, repeat process to fill skillet
7.  Cook pancakes until golden brown on both sides (approx 3 or 4 minutes per side)
8.  Serve hot and garnish with any or all of the above
